Summer weather arrived just in time for Memorial Day weekend. Despite the giant icebergs still floating in Lake Superior, 80° temps had Yoopers and visitors alike roaming the beach, biking around town, and grilling in their backyards.
I bought a watermelon on sale at the store last week and decided to finally cut into it yesterday afternoon. I was shocked to see how much watermelon actually comes from a watermelon. I filled 5 decent sized glass containers and experienced minor panic trying to decide how I was going to use it all (I hate food waste!)
Insert Watermelon Delight here (and, no, I cannot think of a more creative name for it than that). Watermelon is 90% water, so it's super hydrating, delicious, and healthy. Watermelon is high in Vitamin A & C and is also high in Lycopene - that phytonutrient that is also in tomatoes and is beneficial to cardiovascular health. Watermelon is also high in antioxidants that help with decreasing inflmmation - in fact, watermelon is a great choice for your digestive system when you're feeling bloated and uncomfortable. Here's how to do it:
- Cut into your watermelon and dice it into 1 inch cubes. Store in airtight container.
- Add 2 cups of chopped watermelon to a blender.
- Power it up and blend on high for less than a minute.
- Pour into a glass, add mint & ice cubes if you want, and enjoy!
